Striped Bass, Blue Fish and Bluefin Tuna

For Blue Fish

         
   

- Juice of 3 freshly squeezed lemons
- 4-5 fresh basil leaves, chopped
- 1 tbl. spoon olive oil
- Salt & pepper
Mix lemon juice, basil and olive oil in a bowl (adding salt & pepper) to taste.
Once thoroughly mixed, pour entire mixture over blue fish fillet that has been placed on foil.
Wrap foil loosely over the fillet and fold over all open edges.
Grill fillet for approximately 15 minutes on medium/high heat or until fish is flakey.

   
         
   

For Striped Bass

   
         
   

- Olive Oil
- Salt & Pepper
- Lemon Juice
-Melted Butter
Place foil onto cookie sheet.
Place small amount of olive oil on foil.
Add striped bass filet to foil.
Pour small amount of melted butter onto bass.
Squeeze lemon on bass.
Sprinkle on salt and pepper.
Broil on low until slightly brown.

   
         
   

Boil a pan of hot water. Take your striped bass filet and cut it up into cubes. Place the cubes in the hot water for 10 - 15 mins. Remove the cubes, and serve with cocktail sauce.

   
         
   

Take aluminum foil and place your striped bass filet on it. Put mayo on the top of the filet then cover the mayo with bread crumbs or crushed Ritz crackers. Cover the fillet with the foil, and twist both ends. Your fillet should be sealed in the foil wrap. Heat the grill and place your filet on the grill. Cook your fish for 20 mins on medium heat. Check you fish and make sure its flaky. If so its done and ready to serve.

Follow same as above. However instead of mayo, put veggies on top. Onions, peppers, tomatoes, mushrooms or cut lemons Seal the filet and cook for 20 mins on a medium heat. Check to make sure its flaky. If so its done.
